soywedding and related soy friends...

The two-week round of antibiotics mentioned in my previous post has the label "Do not drink milk or eat dairy products while taking this medication."

Anyone got some good soy recipes or product recommendations for me to try in the next two weeks? I'm a hardcore cheese addict.

I adore the flavor of soymilk (especially homemade; I cook it longer for a milkier flavor), but so far I'm unimpressed by soy cheese. It doesn't really melt, so the tuna melts I made tonight had a weird texture next to the ones I made with regular cheese for Laurel and Robert. It's hard for me to describe the taste of soy-based foods except to say that a lot of soy dairy substitutes have an beany taste compared to real dairy products.

As for health benefits, soymilk is about the same as milk. Soy protein can reduce the risk of heart disease, lower cholesterol levels, prevent and treat kidney disease, and improve bone density, among other things. I used to have a recipe for vegan lasagna. I'll take a look (threw my Mom's stuff too) if you're interested. Not entirely sure how good it is, I never went all the way with it. I did modify my regular lasagna recipe, substituting tofu for half the ricotta, and it was edible.

8 or 9 years ago, a colleague of mine introduced me to soy based cream cheese. A brand name is escaping me, not that you'd have much luck finding it where you are, though if all else fails there have GOT to be stores in Chapel Hill that carry it. It was really good, to the point that I bought it myself a few times as a substitution when I was trying to eat healthy.
