The March issue of Delicious Living (free at many natural-foods retailers) has an article called "Veggies in Disguise" that's got a bunch of tasty recipes in it.
Aside from roasted root vegetables and squash through the winter, I don't eat many veggies until they come in season locally and I can buy them fresh at farmers' markets. I don't like canned or frozen stuff; all we buy canned is fruit cocktail because Laurel eats it like there's no tomorrow. (If you buy in bulk, a 6lb 10oz can of Del Monte Fruit Cocktail, drained, packs into around 16 1/2 cup Gladware mini rounds. At $5 for the can and the cost of Gladware, which I wash and reuse, it's a lot cheaper than individually packaged fruit cups.)
